El Viejo is a special blend of Tobalá and Espadin from Unión Mezcal. The union between the producers, farmers, and importers is what this brand is all about, and the name is an homage to an elderly man who told them ensuring the future of mezcal would require a Unión. The brand helps support a replanting project for wild agaves through a careful nursery program and replanting the young plants in their natural habitat. Of the thousands of seeds they plant, only a handful will germinate. But still replanting them in the wild has a much higher success rate than cultivation attempts. It's brands like Unión and these types of projects that will help ensure we have mezcal to enjoy for many years to come. This is a blend of 14-year-old wild Tobalá and cultivated Espadin. The nose has hints of savory smoke and spice, but the overwhelming tropical fruit from the Tobalá is on full display here.
